By now you must know that we take our coffee pretty seriously! Combine that love for coffee with a Disney Park treat and “BAM!,” we get inspired. If you liked our Churro Toffee Recipe, then you will love this! This cold brew was on the menu at Disney’s California Adventure Park during the Festival of Holidays. What I really love about cold brew coffee is the smoothness of the coffee. Since it steeps over time without hot water, the smack-you-in-your-face of dark roast black coffee isn’t there. It’s so good that I wish it was offered all year round, but that won’t stop me from making my own version at home!

What You Need (makes 2 drinks):
- 2 cups cold brew coffee
- Vanilla syrup
- Whipped cream
- Milk or cream
- Churro toffee chunks
Making the Cold Brew:
Let’s start with the cold brew; in the parks they use Joffrey’s coffee. I actually prefer Starbucks coffee to Joffrey’s any day of the week. Another perk (no pun intended) to making your own cold brew at home, you can use whatever blend you prefer. I used Starbucks Verona for mine. Of course, you can also buy cold brew or iced coffee from your favourite supermarket and skip this step all together. If you are making your own, follow these simple steps.
You want to use coarse ground coffee to extract maximum flavor when brewing with this method. I used my French press because it allows the coffee to steep naturally and then pushes the grounds to the bottom when you are done. If you have never used a French press to make your coffee, it’s a game changer. I don’t brew coffee any other way now, and I even travel with one. Make sure to use filtered water, it affects the taste of your coffee. For cold brew, use room temperature or cold water to add to the coffee grinds. Give it a stir, cover with plastic wrap, and put into the fridge for 12-24 hrs. If you like your coffee strong, leave it the full 24 hrs. After it’s done steeping, remove the plastic wrap, put the French press lid on and push the grinds to the bottom. You may want to use a sieve when pouring your cold brew to make sure you don’t get any grounds in your drink.
Cold Brew Ratios:
Filtered water Ground coffee
2 cups 1/4 cups
4 cups 1/2 cups
6 cups 3/4 cups
Churro Toffee Cold Brew Coffee Method:
For assembly, grab two glasses with ice. Add 1-4 pumps of vanilla syrup, depending on how sweet you like it. If you don’t have a pump, 4 pumps is about 2 tablespoons. That would be waaaaaaay too sweet for me. I would suggest starting with a little and you can always add more. I use sugar free syrup in mine, and around 1/2 teaspoon. Fill up your glass with the cold brew and add a splash of your favorite milk or creamer on the top. Next, top with whipped cream, cinnamon sugar and chunks of churro toffee (highly recommended… you can find our recipe here). If you don’t have churro toffee you can skip it and just do the cinnamon and sugar. Sounds simple but it’s oh so delicious and will possibly be my go to cold drink for the summer.
If you are extra like me, here’s how you can garnish your glass to make it look fancy. I made my cold brew on the same day I made my churro toffee, so I already had melted white chocolate and cinnamon sugar ready to go. I simply dipped the rim in the white chocolate and then into the cinnamon sugar. Not necessary but oh so pretty.
